June 2010 Bunco hosted by Kris

We had a lot to share and celebrate in June! Fran's daughter Erin is engaged, and Toni's daughter Kelsey is engaged too - congratulations! Rose shared her good news that her son RJ and his family are moving to Boise this fall. I passed around my grandma's brag book with pictures of one month old baby Allee. Kris's son was recently married and congratulations to their family. And Bonnie, we feel so bad you fell and have a BIG ouchy on your forehead.

Here is the recipe for Kris' yummy dessert.
Upside – Down Berry Cake

½ cup chopped walnuts
1 cup fresh or frozen blueberries
1 cup fresh or frozen raspberries
1 cup fresh or frozen sliced strawberries
(or a bag of mixed frozen berries, thawed)
¾ cup sugar
1 3 oz. pkg raspberry jello
1 ½ cup mini marshmellows
1 yellow cake mix
2 eggs
1 ¼ cup water
2 T canola oil

In a greased 13x9 pan, layer the walnuts and berries, sprinkle with sugar, jello and marshmellows. In a large bowl, combine cake mix, eggs, water and oil, beat on low speed 30 seconds, then beat on medium for 2 minutes. Pour over the berry mixture.

Bake 350’ for 30-35 minutes, until a toothpick comes out clean. Cool for 5 minutes before inverting onto a serving platter. Top with whipped cream.
